Carrot cake

Ingredients

For the cake:

- 1 cup of sugar

- 1/2 cup of apple sauce

- 1 cup of brown sugar

- 4 eggs

- 3/4 cup of olive oil

- Generous splash of vanilla extract

- 2 cups of flour

- 2 tsp of baking soda

- 1 tbs of ground cinnamon

- 1 tsp of salt

- 2 tbs of baking powder

- 2-3 cups of grated carrots

For the icing:

- 1/3 of soften butter

- 3 cups of icing sugar

- 8 oz of cream cheese


Recipe

  1. To a large bowl add the sugar, brown sugar, vanilla extract, apple sauce, eggs, olive oil and mix

  2. Then add the flour, cinnamon, baking soda, salt, baking powder and mix

  3. Add the grated carrots

  4. Divide the batter in two baking tins and bake at 180°C for 30 minutes

  5. Flip the cakes onto the wire rack and let them cool

  6. Add the butter, icing sugar and cream cheese into a bowl and mix

  7. Spread 1/3 of the frosting in between the cake layers and use the remaining on the top and the sides
